Chefs are at the forefront of experimentation with new and unique flavours. The growing trend with some of the world's highest ranked restaurants are to use local wild ingredients. Restaurants like Noma in Denmark, Attica in Australia, and Fäviken in Sweden are experimenting with wild ingredients and each often books reservations several months in advance. By working with local restaurants we are better able to promote wild foods because we can easily show how these new ingredients can be incorporated into our daily lives.
